A Finnish company just secured €77.8 million to build a protein factory that needs no soil, no sunlight, and no growing season. The raw materials are carbon dioxide and hydrogen. The energy source is electricity. The product is food. If Solar Foods succeeds at scale, the geography of where food comes from changes entirely.
What Solar Foods Actually Built
Solar Foods has developed Solein — a single-cell protein produced through gas fermentation. A proprietary microorganism, found originally in Finnish nature, feeds on CO₂ and hydrogen generated from renewable electricity. The microbe grows in a 20,000-litre bioreactor and continuously produces a protein-rich ingredient. That ingredient can replace conventional protein in virtually any food product. Solein also delivers iron, fibre, and B vitamins — functional attributes that go beyond simple protein replacement.
The environmental comparison is the headline number. According to Tech.eu, producing Solein requires around 0.1% of the land and 1% of the water that an equivalent quantity of beef would demand. Moreover, the process runs indoors, independently of weather, climate, or season.
Solar Foods describes Solein as “food out of thin air.” The phrase is marketing, but the underlying claim is scientifically grounded. The company has now validated it at industrial scale.
From Pilot to Factory: The Scaling Problem Gets Solved
Most food-tech innovations collapse between the lab and the production line. Solar Foods has crossed that gap. The company confirmed in May 2025 that Factory 01 in Lappeenranta, Finland replicated the production parameters from its pilot facility at 100-fold scale. Factory 01 ran continuously for eight months before a planned maintenance break. It now targets 160 tonnes of annual capacity by end of 2025.
Factory 02, currently in pre-engineering, targets 6,400 tonnes per year — a 40x increase over Factory 01. Business Finland awarded a €39.6 million grant and a €38.1 million R&D loan under the EU’s Important Projects of Common European Interest (IPCEI) programme to fund construction and commissioning.
Notably, the company has already begun commercialisation. Solar Foods signed MoUs with two international customers for 6,000 tonnes of Solein per year — roughly 50% of Factory 02’s planned capacity. In addition, a US-based lifestyle company recently placed an initial order, with consumer product launches planned for the American market.
Food Security Becomes Energy Policy
The structural implication of Solein isn’t primarily nutritional. It’s geopolitical. Conventional protein production depends on land, water, climate, and supply chains that climate change, conflict, and resource competition increasingly stress. As explored in Agriculture Became a Cultural Experience, farming’s cultural meaning is already shifting. Solein challenges something more fundamental still: the assumption that food must come from agriculture at all.
Gas fermentation decouples protein from soil. If the energy input is renewable electricity, protein production becomes a function of power infrastructure rather than farmland. Consequently, food security becomes an energy policy problem. Countries with abundant renewable energy — Finland, Norway, Iceland, parts of southern Europe — gain a structural advantage in protein production that has nothing to do with agricultural conditions.
In short, this recasts the food supply chain in ways that conventional farming policy isn’t yet equipped to address.
The End of Food Geography
The most radical implication is locational. Traditional protein sources are geographically constrained: wheat requires temperate climates, soybeans require specific latitudes, and livestock require pasture. Solar Foods technology is, in principle, location-agnostic. It can operate in a desert, a polar facility, a dense urban building, or — as the company has explicitly explored — in space.
Solar Foods already works with the European Space Agency on food production for long-duration missions. On those missions, carrying sufficient food is impossible, so producing it in-situ from available gases becomes a serious operational requirement. The same logic applies, scaled differently, to remote communities and food-insecure regions — anywhere land is scarce and electricity is available.
In that framing, the question shifts from “where can we grow food?” to “where can we build a factory and run renewable power?” Those are very different maps.
A New Industry in Formation
The broader fermentation-based protein sector is growing rapidly alongside Solar Foods. Companies like Calysta, Deep Branch, and Evonik are developing similar single-cell protein technologies using methane or hydrogen as feedstocks. Meanwhile, precision fermentation companies produce specific proteins — dairy, egg white, collagen — without the animal. The common thread across all of them: food production migrating from biological systems dependent on land and climate toward industrial systems dependent on energy and chemistry.

Solein takes that logic to its infrastructural endpoint — a protein the company engineers at the molecular level, produces in a controlled facility, and formulates directly into consumer products.
Solar Foods isn’t replacing the farm tomorrow. Factory 02’s 6,400-tonne capacity, ambitious as it is, represents a tiny fraction of global protein demand. However, the company has crossed the threshold that matters most: it has demonstrated that the technology works at industrial scale and that the economics hold. The rest is time and capital.
